Drum flaker The drum flaker is used to transform a molten product into a solid. The process that takes place is a congealing process, a phase transition. The product begins to congeal the moment it comes into contact with the cold rotating drum. After one revolution the completely congealed layer is removed from the drum by a knife and reduced into manageable flakes or flocks. The form and size of the flakes depend on the nature of the product, but also to some extent on the process conditions. The GMF-Gouda drum flaker concept is well thought out.
