Jet Cooker The Jet Cooker is used in the food industry to pre-cook (hydrolyse, pasteurise) or gelatinise products. The Jet Cooker is a cylindrical apparatus containing a static mixing unit. The product enters the bottom of the apparatus as a slurry. Sanitary steam is injected on the opposite side. As the slurry and steam flow upwards, they are mixed intensively by the mixing unit. At the end of the Jet Cooker, the mixing is largely completed. The cooking process continues in the subsequent piping because the product is still under (steam) pressure. At the end of the piping, the product is lowered to atmospheric pressure. The product is then ready for the next process: the drying step. The Jet Cooker can be disassembled easily for cleaning. |
