The GMF-Gouda Cylinder-Freezer scraped surface machine freezes liquid and viscous food stuff within seconds. This machine is able to freeze purees, sauces or fruit juices, as well as encrust products with a high water content.

The GMF-Gouda Cylinder-Freezer is a highly efficient piece of machinery. The freezers are configured on site in accordance with the relevant product features and concrete specifications of use. Our engineers have all the latest technology at their disposal for carrying out essential tests.

Construction and operation
The main components of the GMF-Gouda Cylinder-Freezer system are roller body, driving and pouring system, applicator roller, cooling system and devices for removing/scraping off the products.
The material to be frozen is located in a model container. From there, it is pumped to the chromized freezing roller. A heated applicator roller ensures that the product is distributed evenly across the entire width of the roller body, creating an even layer.

The liquid or viscous product is poured directly into the gap between applicator roller and freezing roller. The permanent contact with the heated applicator roller ensures that the product is still liquid at this stage. It fits easily between the gap, and adheres to the cold surface of the freezing roller. The product is solidified by rotation of the roller. Next, a knife scrapes the product off of the roller. The form and thickness of the film or the produced flakes can be adjusted. The pressure of the scraping knife, generated on hydraulic cylinders, is distributed evenly across the entire width of the roller. The type of scraping knife used depends on the product.

The freezing roller is cooled on the inside. The most commonly used cooling agent is calcium chloride. Other cooling agents, such as for instance ammonia, are available upon request. The cooling agent is conducted to the inside of the roller, where it is directly and evenly sprayed. The distribution system is made completely out of stainless steel. It is easily accessible for inspection and maintenance, so that users do not need to disassemble the appliance. In addition, the freezing system has extremely short changeover times.

Another distinguishing feature is the short freezing times, ranging from 20 to 45 seconds depending on the temperature of the product to be frozen. These short processing times minimise the spread of bacteria and help keep the product fresh.
Among other things, the GMF-Gouda Cylinder-Freezer is used to freeze broccoli puree. The 0.8 mm thick puree is applied to the roller. Within 45 seconds, it is frozen from 65 °C to -15 °C. System capacity is approx.
